This was amazing. Honestly, I haven’t found anything from Oh She Glows that isn’t.
If you aren’t familiar with the website, I encourage you to carve out a chunk of time to really dive in and see all that she has to offer. Recipes, insight, family. It’s all there.
I did make some changes to the original recipe found here.
- I used low fat coconut milk because it’s what I had on hand. I’m sure full fat would have been so creamy!
- I removed cayenne, cinnamon, and cardamom due to the family’s taste preference.
- Added tofu chunks for texture variety and a boost of yummy protein.
It was quick and easy and made enough for leftovers! Enjoy!
