We had a wonderful weekend out at the Creek House but my 21 day fix habits didn’t follow us out there except for one mini yoga session on the sand.
Remember last week how I struggled because I didn’t meal prep? Well this Momma hit the meal prep hard this Sunday evening and it’s already paying off in spades! Check this out!
- Steamed cauliflower (for cauliflower Alfredo later in the week)
- Corn on the cob
- Baked Tofu
- Roasted carrots
- Roasted butternut squash
- Baked sweet potato
And it’s already paid off!
Yesterday was butternut squash and black bean enchiladas! Heck yes.
Tonight is cauliflower Alfredo with protein noodles. Probably 20 min of prep time now that my cauliflower is ready to go directly into the blender.
This week is off to a fantastic start.
